Pan-fried Salmon with Garlic-Dill Sauce and Rice & Broccoli

Pan-fried Salmon with Garlic-Dill Sauce 

and Rice & Broccoli



A delicious and healthy dinner :) 
All natural products that are high-fiber and heart-healthy



Ingredients-

1. 2 Portions of Salmon Filet
2. 200g White Rice
3. 1 Broccoli
4. 2 tsp. Soy Sauce
5. 2 tsp. Lemon Juice
6. Lemon Slices
7. Salt
8. Pepper
9. Pinch of Garlic Powder
10. Pinch of Sodium-Free Vegetable Seasoning (Dash, etc.)
11. My Recipe For Homemade Garlic Sauce
12. Handful of Fresh Dill




  

Instructions-

1. Prepare two portions of salmon filet. Season with salt, pepper, soy sauce, and lemon juice. Set aside.
2. Add a pinch of dried vegetables/herbs mixture onto the salmon. (optional)
3. Bring salted water to a boil. Cook broccoli to desired tenderness. Do not overcook!
4. Bring salted water to a boil and cook rice. When cooked, fluff rice with a fork.
5. Combine broccoli and rice.
6. Heat pan with vegetable oil and fry salmon skin-side first. Cook for about two minutes then flip.
7. When salmon is pink, remove from pan.
8. Finely chop fresh dill and add to prepared garlic sauce. (Click Here for my recipe!!!)
9. Cut lemon into slices and set on plate. Add a serving of rice and broccoli with salmon filet.
10. Drizzle garlic-dill sauce over plate and salmon. Serve.

Penne with Chicken and White Wine Sauce

Can you believe it's September already? Where has the time gone?
Summer isn't over yet, at least for me it isn't. I have one month left of vacation.
For those whose summer is over, I hope to cheer you up with a delicious pasta dish :)
 


Ingredients-

1. ~1kg Chicken Thighs
2. 1 Handful of Spinach Leaves
3. 2 Small Carrots
4. 1 Green Pepper
5. 1 Onion
6. 1/2 Head of Garlic
7. 2 tbsp. Italian Dressing
8. 1 tsp. Paprika
9. 1 tsp. Italian Seasoning
10. Salt
11. Pepper
12. ~500ml 12% Sour Cream
13. 1 Cup of White Wine
14. 2 Boxes of Barilla Penne Pasta
15. 1 Handful of Freshly Chopped Parsley
 

Instructions-

1. Marinate chicken with Italian dressing, seasoning, paprika, salt and/or Vegeta and pepper to taste.
2. Set in the fridge for at least an hour, you may omit this step.
3. Prepare vegetables. Finely chop onion and garlic. Dice green peppers and carrots.
4. Preheat large sauce pan. You may add oil if necessary.
5. Cook chicken until juice is released. Add onion and cook until translucent.
6. Add salt and remaining vegetables (garlic, green peppers, and carrots).
7. Add white wine and cook on low-medium heat, covered with a lid for about twenty minutes.
8. Taste vegetables and when they are semi-soft, add sour cream. Season sauce to taste.
9. Add fresh chopped parsley and stir. Cook on high heat until sour cream thickens.
10. Add spinach in the last few minutes of cooking.
11. Cook penne according to package instructions. Serve when hot and fresh!

Meatballs in Creamy Tomato Sauce with Rice



 It's wonderful to have time to cook a nice homemade meal.
My past week was hectic, with a major exam that left my room filled with unwashed dishes 
and stacks of pizza boxes. I hope most university students can relate. Anyways,
I would like to finally share a very comforting dinner. When I was younger,
my mother would make these delicious meatballs in tomato sauce with rice.
It was one of my favorite dinners and I always asked when will be the next time my mom cooks it.



 

Ingredients- 

*This recipe makes approx. 9 meatballs, for 3-4 Servings
1. 500g Ground Beef/Pork Mix (less than 30% fat)
2. 200g White Long Grain Rice
3. 1 Can Whole Tomatoes
4. 100ml 12% Sour Cream
5. 1 Egg
6. 1 Onion
7. 1/2 Head of Garlic
8. Salt
9. Pepper
10. Oregano
11. Basil
12. Dried Parsley 
13. Paprika
14. Cayenne Pepper
15. Dried Mustard
16. Dried Garlic
17. Bread Crumbs
18. Plain White Flour
19. 1 Bay Leaf
20. ~400ml Water
21. Vegetable Oil

 

Instructions-

1. Place meat in mixing bowl and break it up with a spoon/fork. 
2. Add 1 teaspoon of salt and pepper each and add 3/4 teaspoon of each dried herb. 
3. Add about 5 tablespoons of bread crumbs. Mix meat well with hands.
4. Add 1 egg and mix once again with hands until all ingredients combine.
5. Divide meat into about 8 equal parts. 
6. Take one section of divided meat and form meatballs with hands. Repeat until all meatballs are made.
7. Place finished meatballs on surface covered with some white flour. Cover each meatball evenly with flour.
8. Preheat skillet with a thick layer of vegetable oil.
9. Place one meatball at a time, gently, on hot oil. Lower heat to medium and sear meatballs on all sides.
10. In the meantime, add 1 can of whole tomatoes into large sauce pot. Cook and stir on low heat.
11. When meatballs are finished, set aside. Finely chop 1 large onion and add to the same hot pan. Add salt.
12. Cook onions on low-medium heat, stirring frequently. When almost ready, add smashed and diced garlic.
13. Transfer cooked onion and garlic to the tomato sauce. Stir and simmer for about ten minutes.
14. Remove from heat and blend tomato sauce to form thick consistency, you may add some water here.
15. Simmer tomato sauce once again, stirring occasionally. Add seared meatballs. 
16. Add enough water until meatballs are almost fully covered. 
17. Add a pinch of oregano, basil, dried garlic, and dried parsley to the sauce. Also add 1 bay leaf. 
18. Simmer for about 15-20 minutes. In the meantime, cook rice. 
19. When rice is cooked, the sauce should be perfect. Remove from heat and wait about five minutes.
20. Add about 100ml of sour cream and mix quickly. Check flavor, add salt and pepper to taste.
21. Fluff rice and shape with help of a small round container. Serve with meatball sauce. Add parsley.

Vegetarian Spaghetti

Spaghetti & Mixed Vegetables in Tomato Sauce


 
A pasta dish ready in under thirty minutes,
sometimes the simplest foods can be so satisfying.
Spaghetti, tomatoes, and vegetables, nothing else!
Perfect for vegeterians or for a meatless dinner,
remember it's healthy to go vegetarian at least twice a week :)



Ingredients-  Cooking Time < 30mins

*approx. 3 Servings

1. 250g Spaghetti (Durum Wheat)
2. 1 Large Can of Chopped Tomatoes
3. 250g Vegetables (to save time, I used a frozen mix)
  • Carrots
  • Yellow Carrots
  • Broccoli
  • Green Beans
4. 3 Cloves of Fresh Garlic
5. 1/2 tsp. Garlic Powder
6. 1/2 tsp. Basil
7. 1 tsp. Oregano
8. 1/2 tsp. Cayenne Pepper
9. Salt (add to taste)
10. Pepper (add to taste)
11. Parmesan or other Cheese (optional)


Instructions-

1. Prepare vegetables. Add to sauce pot and cook/steam on medium heat with water.
2. Cook for about seven minutes, then add one can of chopped tomatoes with juice.
3. Add about one teaspoon of salt. Mix contents well. Cover with lid and simmer.
4. Boil water for spaghetti. Add 1 tablespoon of salt to water.
5. Add dried herbs to tomato sauce and continue to simmer on low-medium heat, let contents boil slowly.
6. Mince three cloves of garlic and add to sauce.
7. Cook pasta according to instructions on package. 
8. Check consistency of sauce, add a few tablespoons of water from the boiling pasta water to sauce.
9. Check taste, add salt and pepper as needed. Add more dried garlic to taste, if needed.
10. Drain pasta and cook with sauce for a few seconds. The sauce/vegetables should be cooked by now.
11. Serve with or without grated cheese.
