Breaded Pork Cutlet with Sauteed Garlic String Beans and Creamy Mashed Potatoes


 Here is another traditional Polish dish - "SCHABOWE"
consisting of freshly sliced pork loin, breaded and fried, served with
light mashed potatoes and delicious sauteed string beans with garlic.
This is a classic meal, usually served with homemade chicken soup as a starter.

Ingredients-

1. 8 Slices of Pork Loin
2. Flour
3. 2 Eggs
4. Bread Crumbs
5. Potatoes
6. String Beans
7. 2 tbsp. of Sour Cream
8. 1 tsp. of Dijon Mustard
9. 3 Cloves of Garlic
10. Salt
11. Pepper
12. Garlic Powder
13. Vegetable Oil
14. Fresh Dill

Instructions-

1. Prepare fresh pork loin. It is best to buy an entire pork loin and slice it at home. 
2. Remove excess fat and smash meat with tenderizing hammer. 
3. Season with plenty of salt and pepper. Add a pinch of garlic powder to each cutlet.
4. Set aside. Peel and rinse potatoes (2-3/person). Cook in salted water.
5. While potatoes are cooking, rinse string beans and cook until semi-soft. 
6. When string beans are semi-soft, drain and set them aside.
7. Prepare ingredients for breading. Flour, whisked eggs, and breadcrumbs should be on separate plates.
8. Add one cutlet to the flour, then add to the eggs. Lastly, cover with breadcrumbs. 
9. Repeat this process until all cutlets are breaded. 
10. Heat skillet with a decent amount of vegetable oil. 
11. Place one breaded cutlet onto the hot pan, then add the second. *Cook until golden-brown on both sides.
12. Heat small skillet. Add semi-soft string beans. Season with salt and pepper.
13. Add minced garlic to the string beans and cook for a minute or so. 
14. Potatoes should be cooked by now, drain and mash. Add sour cream and mustard. Mix and mash.
15. Chop fresh dill and add to potatoes. Serve. 

*To prevent dry meat, do not cook meat on any side more than once.
*In other words, do not flip continuously. 
*Be patient, allow the one side to cook, then flip and cook the other side. The meat will be perfect.

Welcome to the world of Polish fast food. If you ever visit Poland,
do not be surprised if you see countless corner shops or booths with
bright signs reading "ZAPIEKANKI." Many people can be found eating these
long baguettes covered with melted cheese and ketchup.

Zapiekanki are absolutely delicious! If you treat each ingredient with respect 
and make use of fresh vegetables and cheese, you will be in for a pleasant surprise!
My family makes Zapiekanki for dinner. Anything homemade tastes delicious, of course.
Zapiekanki are universal, any picky eater can instantly find something that will easily satisfy them. 
The classic zapiekanka has onions, mushrooms, cheese, and chives.
Nowadays, people will put anything they have leftover in their fridge and toast it on bread.
Try it out!

Ingredients-

1. 5 Ciabatta or Baguette Bread
2. 2 Cups of Cheddar or Mozzarella Cheese
3. 2 Onions
4. 500g Mushrooms
5. 5 Slices of Ham
6. 2 tbsp. Margarine
7. 2 tbsp. Vegetable Oil
8. Salt
9. Pepper
10. Chopped Chives
11. Ketchup (optional)

Instructions-

1. Slice bread into halves. Spread margarine lightly.
2. Finely chop onions and grate mushrooms.
3. Heat skillet and melt margarine with vegetable oil to prevent burning.
4. Add onions and cook until translucent. Flavor slightly with salt and pepper.
5. Add mushrooms and cook until they reduce size and are soft. Add salt and pepper. Stir occasionally.
6. Slice ham into smaller pieces and grate the cheese.
7. Spread mushrooms and onions onto bread. Cover with sliced ham. Sprinkle with cheese.
8. Repeat this step until all bread pieces are covered with mushrooms, onions, ham, and cheese.
9. Preheat oven to 375F/190C. Toast in oven until cheese is melted and bread is slightly crispy.
10. Chop chives and add to toasted zapiekanki. Serve with ketchup.

Sauerkraut and Carrot Side Dish

Sauerkraut and Carrot Side Dish 


A classic recipe from the heart of Eastern Europe.
Pair this delicious side dish with fish, 
such as breaded cod, flounder, halibut, etc. 

Ingredients-

1. 1 Package of Sauerkraut
2. 1 Carrot
3. 1/2 Onion
4. 1 Handful of Fresh Parsley (chopped)
5. 2 tsp. of Sugar
6. Pepper (add to taste)
7. 3 tbsp. of Vegetable Oil

Instructions-

1. Rinse sauerkraut under running water to remove the excess sour flavor.
2. Add sauerkraut to salad bowl.
3. Peel and grate 1 carrot. Add to bowl.
4. Add 2 teaspoons of sugar to bowl. Mix.
5. Finely chop 1/2 onion and add to bowl.
6. Finely chop fresh parsley and add to bowl.
7. Add plenty of black pepper for flavor.
8. Add ~3 tablespoons of vegetable oil. Mix contents.
9. Serve as a side dish with any fish meal.*

Steamed Vegetables with Chicken and Rice

Mixed Steamed Vegetables Chicken and Rice



A light and mild dish, certainly healthy with delicious vegetables.
The juicy and tender meat is delicately flavored with gyros spice mix.
This is a quick dinner, perfect for the weekday and for busy people!
Usually when I make mixed vegetables with rice, I make one huge batch and freeze leftovers.



Ingredients-

1. ~6-7 Boneless and Skinless Chicken Thighs
2. 3 Cups of White Rice
3. 2 Packages of Mixed Vegetables (Carrots, Green Beans, Corn, etc.)
4. 1 Package of Broccoli Florets
5. 2 tsp. Gyros Spice Mix
6. 1 tsp. Paprika
7. Salt
8. Pepper
9.  2 tbsp. Vegetable Oil
10. 6 Cups of Water

Instructions-

1. Prepare meat. Cut chicken thighs into bite-sized cubes. Add to bowl.
2. Add 2 tbsp. of vegetable oil, 1.5 tsp. of gyros spice mix, and 1 tsp. of paprika to the meat. Mix.
3. Add salt and pepper to the chicken according to your taste.
4. Set the meat in the fridge for at least 1 hour.
5. After 1 hour, boil 6 cups of salted water. When water boils, add 3 cups of white rice.
6. Cook rice on low until water is absorbed (no more than 20 minutes).
7. In the meantime, cook meat on non-stick pan without adding anymore oil.
8. Steam all vegetables together and add salt and pepper to taste to the vegetables.
9. When vegetables are cooked to desired tenderness, mix with cooked chicken and rice.
10. Taste, and add some more gyros spice mix if you wish to have more flavor.
11. Add salt/pepper as needed. Serve with favorite salad.

Quick & Easy Spaghetti Bolognese

Spaghetti Bolognese 



Everyone loves spaghetti, right?! 
I know kids love it, and most of us are kids at heart, anyways.
Although I did post a recipe a few months back that seems to be very similar
to spaghetti bolognese, it included more vegetables and I used a different pasta.
Today, I made traditional Italian inspired Spaghetti Bolognese, red wine included. 
I usually blend my vegetables into a tomato sauce puree, 
but this is the time-saving version. No loss of flavor occurred!
Words cannot express how delicious this sauce was. 



Ingredients-

1. 500g 100% Ground Beef (High-Quality, grind the meat yourself if possible!)
2. 2 Cups Red Wine (optional, or try using only 1 cup instead)
3. 3 Carrots
4. 2 Onions
5. 1 Red Bell Pepper
6. 3 Celery Stalks
7. 1 Head of Garlic
8. 1 Box Spaghetti (I used Barilla No. 5)
9. 3 Cans of Chopped Tomatoes
10. 2 tsp. Herbs (Basil, Oregano, Thyme)
11. Salt and Pepper (add to taste) 
12. Olive Oil
13. 2 tsp. Sugar

Instructions- 

1. Heat skillet and add a splash of olive oil. Brown meat and break it up into chunks.
2. When meat is brown, add 1 cup of red wine.
3. Add 1 tsp. of mixed Italian herbs. Stir gently.
4. When meat is cooked, remove from heat. Set aside for later.
5. Chop 2 onions and prepare all vegetables. Peel carrots and slice. Slice celery and red bell pepper.
6. Heat large sauce pan and add plenty of olive oil. Add onions.
7. As onions change color, add 2 tsp. of sugar, this will really release their true sweetness.
8. Add sliced vegetables and stir. Add salt and pepper to taste.
9. Cover sauce pan. If your pan is NOT non-stick, add 1/2 cup of water to prevent burning.
10. Cook vegetables for about 15 minutes, then add 1 cup of red wine to the vegetables.
11. Cook vegetables to desired tenderness then add cooked meat. Stir in gently.
12. Add canned tomatoes, 1 tsp. of herbs, salt and pepper (if needed) and cook, covered, for 30 min.
13. Cook pasta according to instructions and serve when hot with grated cheese.
