Pumpkin Broccoli Cream Soup


One of the most satisfying and healthy soups you can make at home very quickly. How did I save time? I had batches of frozen pumpkin and I bought frozen broccoli florets. This turned out to be one the most delicious creams I ever made. One bowl of this puree and you are full. 

Ingredients-

1. 500g Frozen Pumpkin (cut into cubes)
2. 500g Frozen Broccoli
3. 1 Carrot
4. 1 Onion
5. 1/4 tsp. Ginger Powder
6. 1/4 tsp. Cumin Powder
7. 1/4 tsp. Chili Powder
8. Salt (add to taste)
9. Black Pepper (add to taste)
10. 0,5L Chicken Stock (or vegetable stock)
11. 1 tbsp. Vegetable Oil
12. Thick Sour Cream 18%
13. Fresh Parsley
14. Bread (pick a favorite, I used Graham)




Instructions-

1. Prepare vegetables. Cut and dice one onion. Peel and dice one carrot.
2. Heat soup pot with one tablespoon of vegetable oil.
3. Add sliced onions and cook until translucent. Sprinkle lightly with salt.
4. Add sliced carrots and stir. Cook for a few minutes.
5. Add frozen pumpkin and cook, covered, for about 5-10 mins, stirring occasionally.
6. Add 0,5L of chicken/vegetable stock.
7. Bring contents to a boil and add frozen broccoli.
8. Cook on medium-low heat for about 30 mins. Add salt and pepper to taste.
9. Add cumin, chili, and ginger powder. Cook for another 10 minutes.
10. When vegetables are soft, remove from heat and allow soup to cool slightly.
11. Blend soup on high to make a puree. The soup should be thick.
12. Add about one tablespoon of sour cream and mix.
13. Cut bread slices into cubes and toast until brown.
14. Serve soup when hot with toasted croutons and 1/2 tablespoon of sour cream.
15. Garnish with fresh parsley.

Pan-fried Salmon with Garlic-Dill Sauce and Rice & Broccoli

Pan-fried Salmon with Garlic-Dill Sauce 

and Rice & Broccoli



A delicious and healthy dinner :) 
All natural products that are high-fiber and heart-healthy



Ingredients-

1. 2 Portions of Salmon Filet
2. 200g White Rice
3. 1 Broccoli
4. 2 tsp. Soy Sauce
5. 2 tsp. Lemon Juice
6. Lemon Slices
7. Salt
8. Pepper
9. Pinch of Garlic Powder
10. Pinch of Sodium-Free Vegetable Seasoning (Dash, etc.)
11. My Recipe For Homemade Garlic Sauce
12. Handful of Fresh Dill




  

Instructions-

1. Prepare two portions of salmon filet. Season with salt, pepper, soy sauce, and lemon juice. Set aside.
2. Add a pinch of dried vegetables/herbs mixture onto the salmon. (optional)
3. Bring salted water to a boil. Cook broccoli to desired tenderness. Do not overcook!
4. Bring salted water to a boil and cook rice. When cooked, fluff rice with a fork.
5. Combine broccoli and rice.
6. Heat pan with vegetable oil and fry salmon skin-side first. Cook for about two minutes then flip.
7. When salmon is pink, remove from pan.
8. Finely chop fresh dill and add to prepared garlic sauce. (Click Here for my recipe!!!)
9. Cut lemon into slices and set on plate. Add a serving of rice and broccoli with salmon filet.
10. Drizzle garlic-dill sauce over plate and salmon. Serve.

Steamed Vegetables with Chicken and Rice

Mixed Steamed Vegetables Chicken and Rice



A light and mild dish, certainly healthy with delicious vegetables.
The juicy and tender meat is delicately flavored with gyros spice mix.
This is a quick dinner, perfect for the weekday and for busy people!
Usually when I make mixed vegetables with rice, I make one huge batch and freeze leftovers.



Ingredients-

1. ~6-7 Boneless and Skinless Chicken Thighs
2. 3 Cups of White Rice
3. 2 Packages of Mixed Vegetables (Carrots, Green Beans, Corn, etc.)
4. 1 Package of Broccoli Florets
5. 2 tsp. Gyros Spice Mix
6. 1 tsp. Paprika
7. Salt
8. Pepper
9.  2 tbsp. Vegetable Oil
10. 6 Cups of Water

Instructions-

1. Prepare meat. Cut chicken thighs into bite-sized cubes. Add to bowl.
2. Add 2 tbsp. of vegetable oil, 1.5 tsp. of gyros spice mix, and 1 tsp. of paprika to the meat. Mix.
3. Add salt and pepper to the chicken according to your taste.
4. Set the meat in the fridge for at least 1 hour.
5. After 1 hour, boil 6 cups of salted water. When water boils, add 3 cups of white rice.
6. Cook rice on low until water is absorbed (no more than 20 minutes).
7. In the meantime, cook meat on non-stick pan without adding anymore oil.
8. Steam all vegetables together and add salt and pepper to taste to the vegetables.
9. When vegetables are cooked to desired tenderness, mix with cooked chicken and rice.
10. Taste, and add some more gyros spice mix if you wish to have more flavor.
11. Add salt/pepper as needed. Serve with favorite salad.

Vegetarian Spaghetti

Spaghetti & Mixed Vegetables in Tomato Sauce


 
A pasta dish ready in under thirty minutes,
sometimes the simplest foods can be so satisfying.
Spaghetti, tomatoes, and vegetables, nothing else!
Perfect for vegeterians or for a meatless dinner,
remember it's healthy to go vegetarian at least twice a week :)



Ingredients-  Cooking Time < 30mins

*approx. 3 Servings

1. 250g Spaghetti (Durum Wheat)
2. 1 Large Can of Chopped Tomatoes
3. 250g Vegetables (to save time, I used a frozen mix)
  • Carrots
  • Yellow Carrots
  • Broccoli
  • Green Beans
4. 3 Cloves of Fresh Garlic
5. 1/2 tsp. Garlic Powder
6. 1/2 tsp. Basil
7. 1 tsp. Oregano
8. 1/2 tsp. Cayenne Pepper
9. Salt (add to taste)
10. Pepper (add to taste)
11. Parmesan or other Cheese (optional)


Instructions-

1. Prepare vegetables. Add to sauce pot and cook/steam on medium heat with water.
2. Cook for about seven minutes, then add one can of chopped tomatoes with juice.
3. Add about one teaspoon of salt. Mix contents well. Cover with lid and simmer.
4. Boil water for spaghetti. Add 1 tablespoon of salt to water.
5. Add dried herbs to tomato sauce and continue to simmer on low-medium heat, let contents boil slowly.
6. Mince three cloves of garlic and add to sauce.
7. Cook pasta according to instructions on package. 
8. Check consistency of sauce, add a few tablespoons of water from the boiling pasta water to sauce.
9. Check taste, add salt and pepper as needed. Add more dried garlic to taste, if needed.
10. Drain pasta and cook with sauce for a few seconds. The sauce/vegetables should be cooked by now.
11. Serve with or without grated cheese.

Creamy Green Soup

Broccoli Cream Soup 

with Sliced Almonds






This tasty soup is quick and simple to make.
It will take less than 45minutes if you have vegetable stock ready.
The broccoli and almond combination is simply irresistible.
It's healthy, without meat, and delicious...
Try it out!

Ingredients-   Prep Time ~45mins

1. 500g Broccoli (1 Head should suffice)
2. 0.5L of Vegetable Stock
3. 4-5 Cloves of Garlic
4. ~150ml 12% Sour Cream
5. 1 Tablespoon of Vegetable Oil
6. Handful of Peeled and Sliced Almonds
7. Salt
8. Pepper





















Instructions-

1. Prepare broccoli by cutting into florets. Rinse and clean broccoli under running water.
2. Fill a semi-large soup pot halfway with water. Place broccoli inside and boil.
3. Cook on high heat for the first five minutes. Lower the heat, and boil for another ten minutes.
4. Check to see if the stems are soft. Continue to cook until very soft.
5. Mince 4-5 garlic cloves. 
6. Preheat separate pot with one tablespoon of vegetable oil. 
7. Sautee the minced garlic, and add vegetable stock. 
8. Add salt and pepper and simmer on medium-low heat.
9. When broccoli has cooked, drain but not into the sink! Save the green water!
10. Add some of the broccoli stock to the simmering vegetable stock. Mix well and taste for flavor.
11. With the help of a blender, blend cooked broccoli florets with sour cream.
12. When a thick paste has been created, transfer the contents into the larger soup pot.
13. Add stock to broccoli puree. Mix well, add more sour cream if needed.
14. Adjust taste if needed, add more salt or pepper if necessary. 
15. Bring soup to an almost boiling temperature and then remove from heat. Mix.
16. Serve in bowl with 1 spoon of sour cream and sprinkle with peeled and thinly sliced almonds.
